Homemade Microwave Kettle Corn


I love kettle corn.  Ever since I discovered it back in high school at a Renaissance Faire, I've looked for it at every vendor-type event or situation I've gone to.  It's true, the "real" stuff from a vendor at a special event is the best kind, but I think I've finally perfected the make-at-home version.  And the best part?  Each serving is less than 100 calories!

Here's the recipe:

  • 3/4 tsp canola oil (vegetable or other cooking oil works too)
  • 1/4 tsp salt
  • 2 tsp powdered sugar
  • 1/4 cup popping corn
  • 1 brown paper lunch bag
Stir together everything expect the popping corn to make a paste.  Stir in the popping corn.  Now, here's the trick.  You'll need to pop this popcorn in two batches so that you can get all the corn to pop without the early popping corn burning.  So, pour half the recipe in your brown paper bag, fold the top of the bag down a couple times and place in the microwave.  Turn the microwave on high for 3 minutes, but stick around!  Just like store-bought popcorn, you'll need to listen for the popping to stop so you can turn off the microwave before it burns.  Do the same with the second half of the recipe, and you'll have a nice bowl of kettle corn!  And this whole recipe is only 82 calories!
